Pink Salmon Spread-Appetizer
Pink Salmon Spread
Ingreedients:
1 can (7-8 oz.) Pink Salmon
2 Tablespoons of Mayonnaise (optional)
1 Cream Cheese - 8oz. package
2 Strips of Roasted Pimentos (in oil is best, water ok)
3 teaspoons of capers
1-2 teaspoons of horseradish cream (to taste)
Kosher Salt and White ground pepper to taste
2 tablespoons of French Dijon Mustard (creamy)
Preparation:
Mix all ingreedients except for the Pink Salmon
Open can of salmon and drain liquid completly
Add salmon to mixture and allow to chill at least 2 hours.
Note: You may substitute smoked salmon or trout, never use fresh!
This spread will nicely complement woody chardonnays, Alsatian-style
muscats and Pinot Gris...unfortunally Viognier is not a good choice!
Serve slightly chill over mini-toasts or crackers.
